recipes

I've found two recipes in the last week that I really like so I thought I would share.  The first one is for Chocolate Chip Cake Bars.  I'm not going to write this one out because I got it from allrecipes.com.  By the way, if you haven't gone to allrecipes.com, you should.  I love that site.  You can put in the ingredients you have in and it will give you a list of recipes with those ingredients.   That's how I found this one.  I had to make a dessert for church potluck and I had everything this recipe called for at home!  So here it is.  Enjoy!
The second recipe I would like to share is for Baked Oatmeal.  I got this recipe from an email I received from Debbie Uhrig.  James and I went to one of her cooking classes when we were at Silver Dollar City in Branson, MO a couple years ago.  It was a bread baking class and I learned alot.  Anyway, she sends out a email with recipes and I thought I would try this one.  It was really, really good.  James enjoyed it too!  Here it is:

Baked Oatmeal
1 1/2 cups oatmeal(both one minute and old fashion will work)
2 tablespoons wheat germ, optional
1/2 cup sugar
1/2 cup milk
1/4 cup butter, melted
1 egg
1 teaspoon baking powder
3/4 teaspoon vanilla
raisins, nuts, dried cranberries, blueberries, bananas, coconut, all optional(amounts can vary)

Preheat oven to 350 degrees.
Mix all dry ingredients together, blending, then add the wet in the center and mix well.  Add nuts, raisins, etc. lastly.  Fold into a pan(small round cake pan) lined with parchment paper and bake for at least 25-30 minutes until the edges are slightly golden.
Cool on wire rack.  After cooled, crumble and place in a sealed plastic tub in the refrigerator.
Makes 2-3 servings.

This is for one batch.  I doubled it and put it in a small cookie sheet to bake.  I also just made it plain the first time(no added nuts, berries, etc.).  It lasted James and I about 5 days.

Here are a few ways you can eat it:
mix oatmeal and some milk in a bowl. add extra berries, nuts, etc. or some cinnamon OR
put cooled oatmeal in the bottom of a bowl, top with vanilla yogurt and fruit(this is how we ate it and loved it!)
