I had a flashback to last year this morning. O and S were in O's room "cooking"
(Yes, the plate is falling off while I'm taking the picture)
And I was remembering last November when O would "cook" for S
I think the pictures say it all.
I want to try to do something in the blog. I love to cook and share recipes(and get new ones from others!) so I think I'm going to try to post a recipe, either an old favorite or a new favorite, every week. Tonight is a new favorite. I actually had another recipe in mind until I made supper tonight. Maybe it's the 10 inches of snow or the negative degree temperature outside but I've been in a soup mood recently. So I found this recipe in a soup cookbook James got me a few years ago. It's wonderful!! S even had seconds and he's a super picky eater!Especially good with homemade bread. I hope you enjoy!
Chunky Cheese-Potato Soup
2 cups diced peeled potatoes
1/2 cup diced carrot
1/2 cup chopped celery
1/4 cup chopped onion
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 cup cubed fully cooked ham
1/4 cup butter
1/4 cup all-purpose flour
2 cups milk
2 cups(8 ounces) shredded cheddar cheese
In a large saucepan, combine 2 cups water, potatoes, carrot, celery, onion, salt, and pepper. Bring to boil, reduce heat, and simmer, covered, 15 minutes or until vegetables are tender. Add ham.
In a medium saucepan, melt butter, then stir in flour until smooth. Gradually add milk, bring to boil, and cook, sirring, until thickened, about 2 minutes. Add cheese and stir until melted. Stir into soup.
*I just put a dash of salt in and it was fine, I thought 1 1/2 teaspoons was way too much and didn't put in the celery(not a fan)
*I put in 2 cups of ham and it was perfect
